This Newton Pippin was made from apples fallen by wind or weight, then picked from the ground; the fruit from this orchard hasn’t been touched for over 15 years. This is a single varietal, Newton Pippin apple cider. The fruit was first pressed to tote, then transferred to a barrel where it was fermented for 6 months—a still cider driven by acid with present crunch and citrusy pith.
